tory's taco salad

4 cup Iceberg lettuce
1 1/4 cup canned kidney beans
1/4 cup onion(s)
2 clove garlic clove(s)
1 tsp ground cumin
1 medium tomato(es)
1 dried ancho pepper(s)
2 tsp chili powder
1 cup salsa
1/2 cup fat-free sour cream
1 Tbsp cilantro
2 serving 4% lean Ground Beef 4 oz
4 small corn tortilla(s)


Chop or tear lettuce and lay out on two large plates. Chop onion and slice garlic. Toss into a fry pan and water saute. Add spices (I prefer Chipotle peppers to Ancho for a more smokey taste, one is enough). Simmer most of the water off (start with about 1/4 cup). Add kidney beans and beef. Saute until done. Drain beef. Mix together salsa and sour cream. Chop tomatoes and any other vegetables you would like to add. Sprinkle veggies over lettuce. Put 1/2 meat mixture over lettuce. Top with salsa dressing.

Cut up tortillas and bake in 350 oven for 5-10 minutes. Watch them! Crumble on top and have some on the side.

Special Notes

A huge filling salad. Nothing else is needed to make this a meal.
