Diva oatmeal pancake

Ingredients

1/4 cup rolled oats, plain
1 egg white from large egg, or serving egg white egg beaters*
1 Tbs pumpkin, cooked (not pumpkin pie filling
1/4 tsp Baking Powder
1 packet splenda or other sweetener
1 tsp Pumpkin Pie Spice (or more, as desired)
Add ins as desired

Instructions

Heat up a frying pan on medium heat.

Mix together dry ingredients. Separate egg (my dogs enjoy the yolks) and drop the white in, add the pumpkin and mix together. The batter will be thick. You can thin it with a bit of water or skim milk if you'd like. Don't think pancake batter, though.

Drop as one big "pancake" onto the grill. It takes a bit longer to cook than a pancakge does because of the density. Flip over and finish cooking while fixing your coffee.

Add-Ins:

  • Fresh or frozen fruit.
  • 1 tsp baking cocoa (may need a bit more sweetener), top with 1 Tbs PB2
  • 1 Tbs mini chocolate chips, dried cherries
  • Raisins or other dried fruit

These turn out more like a breakfast cookie, although not as sweet, than a pancake. I like them because they are wholesome and easier to make than oatmeal. They also cool faster than oatmeal, so when I'm in a hurry they're perfect. Not only that, but I can pop them into a napkin or some plastic wrap, take with me and eat them in the car.

 

*If using Egg Beaters, check the ingredients for onion salt or other savory spices. I made a batch with what I thought were plain EBs one time and YUCK! Egg Beaters Whites Only is good, but you need a bit more than if you were using a real egg because real eggs cook up fluffier.
